Appellation: Sicilia
Designation: IGT

In a few words: An intense and balanced wine that offers a distinct Mediterranean feeling, introducing through all our senses a reflection of a land of sea, wind and rock. A true product of its terroirs - the volcanic soil of the island of Lipari - this wine offers the freshness and light of the sun and the sea, with a distinct salty minerality.

Site: Sandy, volcanic, deep, fertile and rich in minerals. A Mediterranean climate; temperate, warm, windy, with great temperature changes throughout the day.

Grapes: 60% Malvasia delle Lipari, 40% Carricante

Grapes are grown using Alberello technique (free standing bush), and harvested by hand. This non-interventive vineyard technique is truly both difficult and rewarding, yielding much less fruit of a much higher quality.

Fermentation and Aging: Direct pressing of grapes in pneumatic presses. No must clarification, only static settling at 16°C., fermentation at about 20°C in steel vats (Malvasia) and barrels at 3°/4° (Carricante), passage in barrels with stirring and staying on natural yeasts for about 6 months. The wine is decanted repeatedly to obtain natural clarification and then placed in bottles. 2 months refinement in the bottle.

Notes: Pale lemon with a thousand shades of yellow and green. On the nose, herbaceous scents of Mediterranean maquis; slightly citrus, mineral and salty. Great balance between the aromatic structure of Malvasia and marine acidity of Carricante, which gives power to the sweet elegance and flavor of Malvasia. Enveloping and long-lasting flavor. Perfect with appetizers, pasta and fish dishes. Ageing potential 4-5 years or more.
