In a few words: Fresh, balanced, charming and elegant.
Site: 15 ha vineyard on the slopes on the highest point of La Haye Fouassière. Sand surface with warming quartz, and subsoil composed of gneiss and argile. 6,500 vines per hectare.
Grapes: 100% Melon de Bourgogne (Muscadet). The 35-year-old vines are trained in "guyot Nantais", a local style of vine training, and yield 55 hectolitres per hectare.
Fermentation and Aging: Pneumatic pressing, with vinification in temperature controlled underground tanks, on the lees until bottling.
Notes: Perfect with oysters, seafood, fish, grilled meats, or dry cheeses such as goat or blue cheese - but it's especially tasty when paired with grilled fish with lemon butter!
