Grapes: 70% Garganega, 30% Trebbiano di Soave
Fermentation and Aging: Trebbiano is processed in complete protection from oxygen and this to preserve as much as possible the delicate aromas of this variety. 5% of garganega is often appassimento (dried on straw mats) - this adds body and complexity.
Notes: Very intriguing on the nose, with a spectrum ranging from white flowers sage leaves; hints of balsamic and subsequently exotic fruit. In the mouth you feel the liveliness of Trebbiano well wrapped by the softness of late Garganega. Well balanced.
