Grapes: 85% Pinot Meunier, 15% Chardonnay 

Fermentation and Aging: Vinification in temperature-controlled tanks; malolactic fermentation. Minimal sulphites. Aging on the lees for 24 months. Bottling takes place in March; disgorging in December.

Notes: This wine is given a smaller dosage to bring out the citrus flavors. It’s a fresh Champagne, offering outstanding aromatic precision and clarity on the palate. Its precise dosage reveals a range of dried fruit aromas and leaves room for an unfailing minerality. Lovely on its own or as an aperitif, with seafood or sushi, duck breast, red fruit pie, or fresh red berries.
