In a few words: A big, rich chardonnay.
Site: Clay with a lime substrate, at an altitude of 850 (ocho y medio) meters above sea level. "A vineyard in the clouds!"
Grapes: Chardonnay
Fermentation and Aging: Cold pressed. Temperature controlled fermentation to start, then temperature control is turned off to finish fermentation.
Notes: Straw yellow colour with aromas of green apple and tropical fruits, which also appear in the mouth. Long wine, round and with a crisp acidity. Ideal to pair with smoked fishes, or grilled and spicy food.
