In a few words: Fruity, fresh and well-rounded.

Site: From 35 year old vines planted on 50% limestone, 25% chalky clay and 25% red clay. Hand harvested in September.

Grapes: 100% Sauvignon Blanc

Fermentation and Aging: Fermentation lasts 15 days with temperature control in stainless steel and then left to rest on the lees for 5 months until bottling.

 Notes: Expressive aromatics of citrus fruits and white flowers. On the palate, rich notes of passion fruit, lemon, mandarin, and subtle hints of lychee. Beautiful balance and a generously long finish. Enjoy as an aperitif or paired with seafood, fish, white meats, or goat cheese.
