'Provocante' Pinot Meunier

provocante BACK (1).jpgWinery: Champagne Piot-Sevillano
Region: Champagne, France
Locale: Vincelles (Marne Valley)
Appellation: Champagne
Designation: AOC

In a few words: Provocative and inspiring!

Grapes: 100% Meunier - vines over 25 years old

Fermentation and Aging: Vinification in temperature-controlled tanks; malolactic fermentation. Minimal sulphites. Aging on the lees for 24 months. Bottling takes place in April; disgorging in October.

Notes: This wine reveals the aromatic potential of the winery's oldest vines; a perfect symbiosis between the fruit and the finesse of the greatest Champagnes. Light yellow with brilliant reflections and elegant perlage. The nose presents a character of ripe fruits such as quince and pear. Beautifully paired with fresh apple and quince ratatouille, sea bass, or oysters and pears.
