Site: Loamy clay, farmed using “agricultura integrata” – as naturally as possible. East and west exposure – midday sun. At 200 m above sea level, the vines are trained with 7 buds guyot. Plant density 1600 plants per hectare. Average yield per hectare of 90 quintals.

Grapes: 100% Trebbiano d’Abruzzo. Late manual harvest.

Fermentation and Aging: Crushing and soft pressing, cryomaceration of the crushed grapes for 48 hours, fermentation at 15 ° C. Maturation and refinement in 5 hl French tonneaux for 12 months and 6 months in the bottle.

Notes: The vegetal note on the nose and a slight smell of anise and elderberry make it excellent with 4-6 months aged cheeses, white meats, truffles, fish, or hot appetizers.

“Castellum Vetus” refers back to the ancient castle of the Duke of Acquaviva who lived in Casoli in the 14th Century. Production is about 5,000 bottles.
