Site: From a VERY old 27Ha vineyard of Carignan in San Javier, Maule Valley. The site was discovered by partner Luca, who makes the final selection from the oldest block of the vineyard.

Grapes: 100% Old Vine Carignan - vines 135+ years old. After a manual harvest, the grapes are chilled to less than 5 degrees C before being moved to the winery facility in Casablanca for vinification and elevage. 

Fermentation and Aging: Fermented spontaneously in 300 and 500 liter clay pots, with nothing added. Elevage is in a combination of clay pots and some mainly neutral French oak for about 15 months.

Notes: Production is now reaching about 5,000 bottles. Juanjo recommends drinking up to 10 years after the vintage.
