Site: The Pommard "Tavannes" is one beautiful .8 hectare parcel. The soil is clay-limestone, red in color due to iron ixide. Pommard only produces red wines, therefore Pinot Noir is prince in this village.

Grapes: 100% Pinot Noir

Fermentation and Aging: The grapes are hand-picked, transported to our winery, destemmed and put into the tank. After a few days of cold maceration, the alcoholic fermentation is traditionally started with regular cap punching, thus enabling very small temperature regulations of the fermenting grapes. It is then aged in French oak barrels. It is bottled after aging for 15 months.

Notes: This wine offers substantial body and a round mouthfeel with cherry, blackberry and spice aromas. The body expresses fine, slightly dry tannins. Age for 3 - 10 years. This wine is vivacious when young and mellows with age. Pairs well with beef, lamb or strong soft cheeses.
