Volnay

Pillot_Chassagne-Montrachet_Blanc_label.jpgWinery: Domaine F&L Pillot
Region:
Bourgogne (Burgundy)
Locale:
Chassagne-Montrachet, France
Appellation:  Volnay
Designation: AOC

Site: A total of 5 parcels planted between 1960 and 1999. Two are classed 1° Cru, Ronceret and Brouillards. Too small in size, we have declassified the two 1° Cru parcels and assembled them as one cuvée.

Grapes: 100% Pinot Noir

Fermentation and Aging: The grapes are hand-picked, transported to our winery, destemmed and put into the tank. After a few days of cold maceration, the alcoholic fermentation is traditionally started with regular cap punching, thus enabling very small temperature regulations of the fermenting grapes. It is then aged in French oak barrels. It is bottled after aging for 15 months.

Notes: This is a full-bodied wine, vigorous and elegant. Age for 3 - 10 years. Pairs beautifully with roast beef, chicken or hard cheeses.

Vintage: 2008
