Site: Vineyards around Sambuca di Sicilia. Soft sand and calcareous soils. Sambuca is in south-western Sicily; near the southern coast and within easy distance of marine breezes.

Grapes: 100% Nero d’Avola

Fermentation and Aging: Vinified and settled in stainless steel. Aged in partially new barrique for 8-10 months before release to the market.

Notes: In 860 BC the Arabs conquered Sambuca di Sicilia. Their name for Sambuca was “Zabut” – which now gives its name to Zabù. “Chiantari” in Sicilian dialect means “cultivar” or “variety” and is homage to the viticulturists who work the land in order to produce this special wine.

Pairings: This is Nero d’Avola with a more serious side. The nose shows beautiful red fruits but with a complex range of both high and low notes. Anything on the barbeque will be pure magic with Chiantari – especially roasted or grilled beef and lamb.
