Site: A 24-year-old single parcel of clay and limestone soil with fossilized shells situated at 2,000 feet above sea level. Fiano di Avellino sinks its roots deep into ancient volcanic ash and lava flows releasing millennia of geological history in the glass. The vines are guyot trained, with southeast exposure. 3,500 plants per hectare.

Grapes: 100% Fiano, hand harvested in late October

Fermentation and Aging: Once the grapes are harvested they ferment in 100% stainless steel. The wine then bottle ages between 3-4 months before release. Light filtration and low SO2. 

Notes: Straw yellow in color with fresh notes of spice mixed with lime blossoms and honey. Palate shows mineral notes that hint at apricot and orange peel, followed by a long finish of toasted hazelnut. Perfect with fish, shellfish pasta, risotto with vegetables, white meat, buffalo mozzarella.
