Site: Hand harvested from estate vineyards high above the Douro river.

Fermentation and Aging: After hand harvesting, the wine is fermented on its skins until fermentation is interrupted with the addition of brandy. It rests for about 3 years in stainless steel vats to keep it in a reductive environment. Blended and bottled and presented to the market.

Notes: Pair it with cheeses, especially blue, or dark chocolate truffles. Serve at cellar-temperature of 55ºF or so.
