Fermentation and Aging: After hand harvesting, the the must goes into stainless steel vats until fermentation is interrupted with the addition of brandy. After fermentation and stabilization, it stays for about 3 years in large barrels. Blended and bottled and presented to the market.

Notes: Serve chilled as an aperitif, or use in cocktails. The White Port and Tonic, with a twist of orange and a sprig of mint is a classic. Pairing with melon and Spanish ham canapés, salted nuts and foie gras. Achieves about 105 grams per liter of Residual Sugar. Serve it pretty cold - chill it in the fridge, and take it out 20 minutes before serving. About 25,000 bottles produced.
