Site: From an old Pinot Noir vineyard in Casablanca. Grapes for the Tinajas del Monte bottling come from 35+ year old vines.
Grapes: 100% Pinot Noir, harvested manually.
Fermentation and Aging: Fermented spontaneously in 300 and 500 liter clay pots, with nothing added. Elevage is primarily in clay pots, with just one barrel seeing neutral French oak for about 12 months. A minimal amount of SO2 is added at bottling so the wine can age in your cellar with no risk to its integrity.
Notes: Production is pushing toward 10,000 bottles. Juanjo recommends drinking up to 8 years after the vintage and drinking the wine fairly cool. Stylistically, the wine is delicate, beautiful, feminine, a Pinot Noir lover's Pinot Noir.
