Site: The vineyards reside on exceedingly beautiful slopes, where the soil is calcareous and clayey.
Grapes: Lambrusco Montericco 100%
Grapes are cultivated on lovely Guyot trained vines, then picked by hand usually in early October, and immediately pressed.
Fermentation and Aging: The must is subjected to clarification, and then fermented; racking from gross lees and fining in tanks on fine lees.The subsequent fermentation occurs in the bottle, according to the Ancestrale Method. Aged in bottle for at least 10-12 months.
Notes: Creamy foam with fine and persistent bubbles, pale pink but slightly turbid due to the yeast in suspension. Aromas of wild strawberries and grapefruit accompany hints of bread crust, with savory notes of mint and sage. The palate is dry, persistent, with good acidity and clear notes of citrus. Pairs well with raw fish, cold cuts, traditional Emilian pasta dishes and white meats. 1,200 bottles produced.
