Site: Selected from the estates 3 Montefalco vineyards - Pioppi, Querce, and Montioni, around 350 meters altitude.
Grapes: 100% Sagrantino
Fermentation and Aging: Harvested a bit early to retain acids, then the grapes are dried for 40-50 days, giving grape sugars of 350 g/L. The raisins are crushed, then undergo a long, slow fermentation. Requires a special yeast to start the fermentation (other wines from Perticaia are not inoculated). At 100 g/L, the fermentation is stopped. The result is 15% natural alcohol. Aged 36 months in total, scheduled by the production regulations in the following order: 12 months in French bay oak barrels (barriques and tonneaux, 12 months in steel, and 12 months in bottles.
Notes: Intense ruby red with pomegranate hues. Aromas of ripe fruit - prune and cherry with notes of marmalade, all enriched by overtones of vanilla, cinnamon and other species typical of the variety. A full-bodied wine with a typical tannic finish, accompanied by an enjoyable sweetness. Ideally coupled with roast dishes such as lamb; also pairs nicely with dark chocolate based sweets. This wine can age very well in the bottle for many years, notably improving its quality.
