Fermentation and Aging: Vinified entirely in stainless steel. 4-5 days of maceration on the skins; slow fermentation for 20 days at 70-75°F. One year finishing in bottle.
Notes: The color is red-ruby, with a purple tinge showing its youth. The fragrant aroma of wild cherry, prune and hoary stock, bump into a harmony in the palate, with a balance of alcohol, softness, freshness and saltiness. Versatile, this wine pairs well with cured meats, red sauce dishes, savory baked fishes or fish stews.
Fun fact: Aión is the Greek god of philosophical time (ever notice how slowly time passes when you are bored, and quickly it passes when you’re doing what you love?); but "Aión" is also the reverse of “Noia”, Italian for “boredom”. So to drink Aión is the opposite of boredom!
