Fermentation and Aging: Grapes are pressed using dry ice, in the absence of oxygen; cryomaceration takes place before fermentation. Aged for 6 months in steel tanks.
Notes: Moroder's patient dedication has permitted the revival of this grape variety. An ample range of fragrances with mainly exotic aromas, pineapple and peach. A remarkable acidity and the right alcohol content result in a fresh and well balanced wine. It pairs in a good manner light courses, fresh cheese, Parma and other air-dried ham. It goes very well with seafood: the best pairing is with the famous “mosciolo di Portonovo”, a typical wild mussel from Conero coastline protected by Slow Food Italy.
