In a few words: An ode to complexity, meant to be savored as an immersive sensory experience.

Site: Vineyards are located in Tregnago, at an altitude between 350-560 meters above sea level. Glacial morainic soil composition. Vines are 10-20 years of age, trained in the Guyot method. Harvest  during the second week of September, with careful selection of grapes.Grapes: Corvina, Corvinone, and Rondinella

Fermentation and Aging: Following harvest, the long appassimento (grape drying) process happens in traditional family-owned fruttaio premises sited in the hillside vineyards themselves. The grapes remain there until January, allowing a higher concentration of sugars. The grapes are destemmed and pressed, and the must fermented in stainless steel tanks. The first phase of maceration takes place between 2° and 5° C (matching the temperature of the grapes as the leave the drying facility). Then fermentation takes place for 10 days at a temperature of 20-24° C. The wine is aged for 12 months in tonneaux, then refined in ten bottle for 10 months before release. 

Notes: This wine stands out for its deep red color with purple highlights. On the nose, it offers a complex bouquet with notes of ripe fruits such as cherries and plums, enriched with hints of chocolate and cinnamon. On the palate, the wine is generous and velvety, with a perfect balance between the natural sweetness of the fruits and freshness, concluded by a persistent and pleasantly aromatic finish. Pair with dark chocolate desserts, bleu cheeses, and dry pastries.
