In a few words: A fresh and inviting wine that exquisitely captures the essence of the Veronese territory of Valpolicella.
Site: Vineyards at an altitude 100 meters above sea level, with rich soil composition augmented by calcareous sediments. Pergola and Guyot training. Harvest between mid-September and early October.
Grapes: Garganega, Trebbianello, and Chardonnay
Fermentation and Aging: After being moved to the winery, the grapes are de-stemmed and gently pressed. The the static clarification of the must is followed by the fermentation in stainless steel at 14-15° C. The wine remains on its yeasts for 4 months before bottling.
Notes: On the nose, the Custoza DOC by Monte Zovo reveals a fresh and inviting bouquet, dominated by notes of white fruits like green apple and pear, with floral nuances and slight hints of almond. These aromas are perfectly interwoven with a subtle minerality that recalls the rich soil composition of the region. On the palate, the wine is elegant and refreshing. Its acidity is well-balanced and pairs with a medium-light body. Ideal as an aperitif or paired with hors d'oeuvres of vegetables and fresh cheeses, or with a delicate main course dish of risotto or fish.
