In a few words: Unmistakably fresh, vibrant and joyful, with a graceful and harmonious elegance.

Site: Vineyards are located in Caprino Veronese, with southern sun exposure at an altitude between 250-300 meters above sea level. Glacial morainic soil composition. Vines are 10-20 years of age, trained in the Guyot method. Grapes are hand-picked, with harvest beginning at the end of September.

Grapes: Corvina, Corvinone, and Rondinella

Fermentation and Aging: Grapes are destemmed and pressed, followed by 12 hours of cold maceration where the skins remain in contact with the must in order to extract varietal aromas, flavors and color. The must, after a soft pressing, is then fermented in inert vessels and run off its skins. The static clarification of the must is followed by fermentation held at 15-16° C. The wine remains in inert vessels on its fine lees until it is bottled.

Notes: A lovely and characteristically pale salmon pink color. A bouquet of red berry and spring wildflower aromas lift out of the glass, enriched by a hint of delicate spices. On the palate, a bright acidity, with a notable hint of salty minerality, and a balanced softness leading into a crisp finish. This wine can age in a lovely way for more than 10 years, maintaining its light color, its freshness and salinity while increasing and developing the complexity of its flavors. Its light yet expressive structure makes it highly versatile, and particularly suitable for pairing with light dishes; try it with seafood appetizers, fresh salad, vegetable dishes, pasta and pesto, white meats, grilled fish, or pizza.
