Site: Vineyards are located in the northern area of Verona, with southern sun exposure. Glacial morainic soil composition. Vines are 10-20 years of age, trained in the Guyot method. Grapes are left on the vine for over-ripening for 2-4 weeks longer than usual, depending on the vintage, then harvested by hand sometime between mid- and late-October. The result is a natural drying of the grapes, with each varietal reaching different levels of maturation. This is precisely what makes this wine so nuanced and interesting!
Grapes: Corvina, Corvinone, and Rondinella
Fermentation and Aging: The grapes are destemmed and pressed, then fermented for 25-30 days at a controlled temperature of 20-24° C. After the racking of the must the wine is aged for 12 months in barriue, tonneaux and cylindroconical wood vessels, followed by refinement in inert vessels.
Notes: Aromas leap out the glass from the moment of the first pour, beginning with herbaceous tones of hay, dried wildflowers and black tea, followed by notes of juicy black plum and dark berries. The palate is plush and rounded, leaning into its rich fruit, and balanced with a touch of acidity. Pairs perfectly with grilled meats, pasta, mushrooms or truffle, or with starters of cold cuts and medium matured cheeses.
