Winery: Ca' del Baio
Region: Piedmont
Locale: Treiso (Barbaresco)
Appellation: Barbaresco
Designation: DOCG
In a few words: The winery's most traditional-style Barbaresco represents the elegance of Barbaresco at its very best, without flaunting the muscle of Nebbiolo.
Site: West-facing vineyards of bluish clayey-limestone marl surrounding the winery, planted from 1971 to 2000. Harvest in early October.
Grapes: 100% Nebbiolo
Fermentation and Aging: Traditional stem-free fermentation on the skins for 7-15 days in steel at a controlled temperature. The wine matures for 30 months in casks made of Slavonian oak, and is then cellared for 6 months in the bottle prior to release.
Notes: Garnet red with an intense aroma of powerful fruit, dried flowers and underbrush. Dry, smooth and rounded on the palate, ending in a warm finish with nicely-balanced tannins. A natural match for roast and terrine meats, mature cheeses and fondues, meat and vegetable soups.
Already soft and elegant 3 years after the vintage, it continues to age nicely for 10-15 years in the cellar.
