Site: Vineyards are 300-600 meters above sea level, located in a slightly cooler microclimate that helps to build acidity in the wine.
Grape: Nero d'Avola
Fermentation and Aging: Maceration at controlled temperature. The grapes, after being destemmed and crushed, go to maceration at a low temperature for up to 10-12 days. Aged in French and American oak barrels for at least 6 months.
Notes: On the nose, fruity aromas with hints of thyme and rosemary. On the palate, ripe blackberry fruits, prunes and a little note of liquorice and pepper. With firm tannins and medium acidity, it can be enjoyed on its own or with food. Pairs with grilled meats & vegetables or roasted game birds.
