Site: Vineyards are planted on hilly slopes with an average altitude of 350 meters above sea level. The terrain is clayey and rich in limestone deposits, dating from different geological periods: part of this very deep, other parts very rich in fossils, both giving the wine intense and varied tones. Surrounded by woodlands, the hilly area is an ideal microclimate for vineyards and olive groves.
Grapes: 100% Sagrantino, from the winery's best selection massale; hand-picked in the second or third week of October.
Fermentation and Aging: Vinification using gravity feed. Fermentation in contact with the skins for 3 or 4 weeks at a controlled temperature. Malolactic fermentation takes place in wood. Aged in lightly toasted barrels for 6 months, then in oak barrels for 24 months; The wine settles in glass lined cement vats for 6 months; final ageing in the bottle for 2 years. The wine is not stabilised nor filtered.
Notes: Intense ruby red in color A rich and powerful, ethereal and very complex nose. Notes of fruit and aromatic herbs: citrus, cherry, berry, mint and oregano. On the palate this wine is well structured, with firm and persistent tannins. A wine that is best expressed with a long bottle aging Pairs well with grilled, roasted, braised or stewed red meats, game and hard mature cheeses. Sagrantino generally reaches full maturity after 10 - 15 years from the harvest and is able to bottle age for more than 30 years.
