Site: Vineyards on limestone/clay soils surrounded by forest and olive groves, situated at an altitude of 350 meters above sea level with western exposure.
Grapes: 100% Trebbiano Spoletino, from massale selection of the best old Trebbiano Spoletino vines, grown according to the Guyot vine training system between maple trees. Grapes are hand-picked in the second half of October.
Fermentation and Aging: Spontaneous fermentation without temperature control, with a long maceration on skins in a combination of terracotta and clay vessels (amphora). Goes through malolactic fermentation and is racked back into the clay vessels for an additional 9 months; bottled unfined/unfiltered with minimal So2. Only 3,000 bottles produced.
Notes: Golden in color, the nose shows savory and spicy notes, with almond, citrus and a hint of stone fruit. The palate has beautiful structure, round and textured with fine acidity, some savory orchard fruits and a touch of tannin. Long and dry on the finish. Serve cool, not too cold, with vegetable gratins, soups or light carnivore dishes.
