In a few words: Fresh and balanced with compelling depth, and just a touch of nostalgia.
Site: This cuvée is the balanced expression of a mosaic of plots. The terroir is comprised of ochre, grey or blue sandstone and schist soils, which are slightly acidic with a fragile structure. This is a high quality but demanding terroir which naturally produces low yields, of around 25 hl/ha. The landscape is undulating, and the vines are surrounded by natural hedgerows, woods and holm oak forests, cork oaks and garrigue.
Grapes: Syrah, Carignan, Mourvèdre, Grenache
Fermentation and Aging: Hand harvested with parcel selection for the ripest grapes (from August 28 for the first Syrah until October 1st for the last Mourvèdre). Long maceration for 20 to 30 days. The wine is matured in two or three-wine oak casks for 12 months, punctuated by regular racking off.
Notes: Let yourself be carried away with the alluring scents of wild berries, rockrose, rosemary and hot stone, on a delightfully rounded and smooth palate. Try it with charcuterie or roast chicken with vegetables.
