Site: From the coldest part of Saint-Brice, silty/clay soils, high on a ridge in a vineyard of about 40 hectares. Vines' average age about 25 years.
Grapes: 85% Sauvignon, 15% Semillon
Fermentation and Aging: After a cold-maceration of up to a few hours, the wine is vinified in temperature-controlled, stainless steel vats in an anaerobic environment. Aged on fine lees for 3 to 4 months. Settled in stainless steel vats before being bottled.
Notes: Our shocking success with this wine is testament to the balance between the citrusy, grape-fruity Sauvignon grape made a touch more subtle with the influence of a bit of softening, mellowing Semillon. Production of about 41,000 bottles.
