Fermentation and Aging: Fermentation in stainless steel preserves this wine’s natural freshness, and aging in 70% stainless steel with 30% in acacia barrels gives the wine a serene softness. Aging on the lees with regular stirring for 8-10 months.
Notes: Expressive on the nose, revealing aromas of ripe lemon, green apple, and peach. The palate is an explosive yet balanced expression of fresh lemon, juicy zest and hints of lychee, along with more delicate floral notes. Beautiful minerality and crisp acidity is complemented by a slightly creamy mouthfeel and finishes with pure elegance. This wine holds its own as an aperitif, and is delicious paired with seafood, fish, white meats, or goat cheese.
