In 1975, the Ellevin family began to develop their estate in Chichée, on a plateau near the vineyard of Vaucoupin. Now, four generations later, the domaine Brigitte Cerveau produces a range of superb examples of the terroirs of Petite Chablis, Chablis, and the Premier Cru vineyards Vosgros and Vaucoupin which flank the river Serene. Alexandre has taken charge of the winemaking since he finished oenology school & his travels in Australia in 2003. Alongside his parents Jean-Pierre and Brigitte, they farm 16 hectares sustainably across four appellations. Their production of approximately 65k bottles per year is entirely Chardonnay and the vineyards see a yield of 45-65 hectoliters per hectare. 95% of their fermentation & aging takes place in stainless steel, with the exception of some older vine expressions, which see some time in old barriques, and all wines undergo complete malolactic fermentation.
