In a few words: Fruit- and garrigue-driven, elegant Gamay. Strawberry, cherry and blueberry suffused with fragrances of violet, liquorice and white pepper. Full-bodied and juicy on the palate.
Site: 15ha of pebbly soils with sandstone and blue stones, clay and deep altered pink granite, facing south and south-east
Grapes: 100% Gamay
Fermentation and Aging: Partially destemmed, fermented in cement vats with a "chapeau grillé" used to keep the cap submerged & avoid pumpovers. Macerated 15-20 days. Aged one year in neutral oak.
Notes: Pairs well with chicken or, more generally, white meat, pork filet mignon or langoustines, as well as Pad Thai & chestnut purée.
