In a few words: Here is a classic, delicious, and serious Pouilly-Fuissé.
Site: Triassic clays, heavy soils with a very distinct vein on the land classified in appellation Pouilly-Fuissé. South-facing, 310 to 320m above sea-level with a 10 to 15% gradient.
Grapes: 100% Chardonnay, harvested by hand. Average vine age of 35 to 65 years.
Fermentation and Aging: Alcoholic fermentation occurs spontaneously from native yeast, in 228 liter barrels. Full and spontaneous malolactic fermentation. Aged in barriques, 10-15% new, on the lees for 10 to 12 months.
Notes: Straw yellow with golden reflections; vibrant, expressive and bright. The nose is an expression of ripe fruit (peach, mango), toasted bread, fresh butter and a hint of spice (cinnamon, white pepper). On the palate, the wine is powerful and beautifully structured. Pair with white fish in sauce, snails, or white meat.
Ronchevat probably derives from the word roncevaux, which means a valley full of uncleared brambles.
