In a few words: The pure natural expression of a little known and unjustly misunderstood varietal. Vinified, raised and bottled without any addition of sulphites.
Site: A small vineyard 350-360 meters above sea level on a 10% east-facing gradient. Very stony, sandy clay.
Grapes: 100% Aligoté
Fermentation and Aging: Pneumatic pressing, cold static racking, alcoholic fermentation in thermoregulated stainless steel tank with indigenous yeast, full and spontaneous malolactic fermentation. Aged 5 months in thermo-regulated stainless steel vats on the lees.
Notes: The color is a vibrant and crystal clear pale gold. Aromas of white peach dominate the nose, delicately enhanced by citrus; while in the mouth you have a lively, light and airy texture. Notes of peach, lemon and grapefruit are expressed with subtlety, leaving room for a refreshing and thirst-quenching finish. Perfect for drinking straightaway as an aperitif or paired with sushi, seafood, grilled fish, terrine, or goat's cheese.
