Site: Vineyards above Vouvray, soils clay-calcaire. Vines are 25yrs of age producing 65HL/Ha.

Fermentation and Aging: Classic vinification in temperature controlled cuves after soft pressing and clarification. After six months of settling in cuve, the wine is bottled and undergoes its second fermentation in the bottle. After at least two years (usually longer) "sur latte" the wine is disgorged and finished.
Notes: Although marked "non-vintage", all Brisebarre's wines are from a single vintage. Beautiful persistent fine bubbles; nose of ripe apples with sweet, yeasty notes of brioche - typical for sparkling Chenin. Complex and generous. Drink to accompany all moments of conviviality, ceremonies, parties, as an aperitif, or with a fruit salad, or spicy chicken or pork dishes. Residual sugar about 10g/L. Keep for up to ten years in the cellar. About 15,000 bottles produced.
