Fermentation and Aging: Classic vinification in temperature controlled cuves after soft pressing and clarification. After six months of settling in cuve, the wine is bottled and undergoes its second fermentation in the bottle. After three years "sur latte" the wine is disgorged and finished.
Notes: With its additional year on the lees and slightly lower yield, the vintage dated Fines Bulles offers even more complexity, with the yeasty brioche even more well defined. Remarkably fine bubbles with an elegant impression on the palate and beautiful long finish. Residual sugar about 10g/L. Keep for up to ten years in the cellar.
