In a few words: Full white wine characteristic of the Chenonceaux AOC with nice minerality. Ripe nose of pear and lychee with hints of rose. Round and fleshy mouth. Long and elegant finish.

Site: 15-40 year old vines on limestone subsoil (Tuffeaux) / Siliceous-clay ground with rocky (Perruches) soil.

Grapes: 100% Sauvignon Blanc

Fermentation and Aging: Filling of the press by a conveyor belt. Low pressure pneumatic pressing. Vinification in stainless steel tanks thermoregulated for 4 to 6 weeks at low temperature, followed by a minimum of 8 months of aging.

Notes: Age up to 8 years. Serve between 12-15 ° C with gourmet starters, white meats or fish sauce (white butter bar, stew, chicken) or dishes sweet and salty (peach duck, raisin quail, lamb tajines). 7000 bottles produced.
