In a few words: A rich & brambly expression of Touraine Gamay with food-friendly fruit, blackcurrant, cherry and thyme notes. Soft and lush texture with a fresh and fruity finish.
Site: 15-40 year old vines on limestone subsoil (Tuffeaux) / Siliceous-clay ground with rocky (Perruches) soil.
Grapes: 100% Gamay
Fermentation and Aging: Mechanical harvest, vinification in thermoregulated stainless steel vats for 4 to 6 weeks. Pneumatic pressing of marcs, at low pressure. Bottled in the spring.
Notes: Serve between 15 ° -18 ° C as an aperitif, with cold starters (salads, charcuterie), spicy dishes and grilled or roasted meats. 15,000 bottles produced.
