Site: Contiguous vineyards around the homes of Gilles and his parents, on the second and third terraces. Entirely older vines of 25+ years, with perfect SW exposition. Clay/calcareous soils.

Grapes: From 100% Malbec to primarily Malbec, with a small percentage of Merlot to soften the wine a bit as necessary. The proportion is never more than 15% Merlot.

Fermentation and Aging: Fermented in stainless steel with the skins for 18-21 days. Undergoes macro and micro oxygenation (standard practice now for most vintners in Cahors), and a small portion is aged for 5-6 months in barrique. The wine is assembled, and fined in the bottle for as long as required for perfect balance.

Notes: Chemin de Compostelle means the “road to Compostela.” This historic route, which runs through Cahors near the winery, was used by pilgrims to get to Spain’s Santiago de Compostela, home of the gorgeous cathedral and the relics of St. James.
