Winery: Bodegas Primitivo Quiles
Site: High average temperatures, scarce rainfall, plenty of sunlight; soils are limestone with exceptional mineral content. Very old, low yielding vines.
Grapes: 100% Monastrell
Fermentation and Aging: Produced in small batches; aged 24 months in old oak barrels, then aged for a longer period in bottle. Mellow, rounded, mature and full-flavored with a distinct woodiness coming through not only from the old wood in which it’s aged, but the wood of the old vines as well, with hints of spices and ripe fruit. Ideally suited for lamb, stews, rice dishes with meat or vegetables, pork and roast meat.
