Site: 50 and 70 year old "pagos" or small plots at 450 meters in Villabuena de Álava adjacent to the winery, planted 3 dimensionally ("En Vaso" or "Goblet" pruning) in clay-calcareous soils. Climate is Atlantic with Mediterranean influence; rainfall 400-500mm. Yields are a mere 26 HL/ha!
Grapes: Tempranillo, harvested by hand in the 2nd week of October
Fermentation and Aging: After tender loving care in the vineyards, with a green harvest to reduce yields to a preposterous 26 HL/Ha, the grapes are hand harvested in the gentlest possible way and transported within 2 hours to the winery. After a short cold-soak, fermenation is carried out with native yeasts at controlled temperatures. After fermentation, the wine is racked into new American oak barriques where it undergoes malolactic fermentation and matures for a minimum of 12 months, then undergoes several months of refinement in the bottle before being placed on the market. No fining or filtering.
Notes: About 11,500 bottles produced. Though not designated as such, this wine would qualify as the winery's "Crianza" bottling.
