Sicilia (Sicily)
Passopisciaro, (Sicilia) Italy
Appellation: Etna Bianco
Designation: DOC

Site: Grown on the northern slopes of Mt. Etna, at 850 to 1200 m, from an accurate selection of indigenous Etnean grapes. Bush trained with 8.500 plants per hectare. Soil is sandy, volcanic, very rich in minerals, with subacid reaction. Typical high-hill climate, considerable temperature extremes between day and night.

Grapes: Carricante (70%), Minnella, Grecanico (together 30%)

Fermentation and Aging: Grapes are picked at the end of September to beginning of October with manual harvest. The grapes are harvested and selected, brought to the winery in shallow crates,
where the whole clusters are soft-crushed. Fermentation in small used barrels at 20°C. Aged In concrete and steel vats for 12 months and in the bottles for at least 6 months.

Notes: The wine is greenish straw yellow in color. The aroma is fruity with hints of aniseed. This is a dry, harmonic wine with good structure and the right acidity.

Mt. Etna regenerates itself constantly, and generates new life and new culture: the frequent eruptions cause the landscape to be ever-changing, and the same power drives the work of the people who persevere in living on the Muntagna.
