Site: Planted in 1993-94, Albarello (head-pruned), 6500 plants per hectare. Clay-calcareous soils. Vineyard covers 6 hectares. Yields 37 hectoliters per hectare. Altitude 300 meters. Exposition SW.
Grapes: Sangiovese “in purezza”, a careful hand-selection of only the most fully-ripe bunches taken in a yet another separate pass through the vineyard.
Fermentation and Aging: Soft destemming/crushing. Fermented in stainless steel vats at a maximum of 30ºC. Long post-fermentation maceration on the skins. Elevage for 12-15 months in tonneaux (500L) and barriques (225L) of half new, half second and third passage French oak. Refined in the bottle for an additional 24 months.
Notes: Ombroso is produced only in exceptional vintages.
