cavallotto-pinner.jpgWinery: Cavallotto
Region:
Piemonte (Piedmont)
Locale: Bricco Boschis, Castiglione Falleto
Designation: IGT

Site: Vineyard is situated on the steep hillside facing East/Northeast, between Bricco Boschis and Vignane.

Grapes: 100% Pinot Nero (Pinot Noir) -  harvested in September. Pressed off the skins and vinified as white wine.

Fermentation and Aging: Low-pressure, very gentle whole berry pneumatic pressing before fermentation. Fermentation controlled at 16°-18°C for 45 days under slight pressure in stainless steel autoclaves. The wine is aged sûr lie for 9 months in the steel autoclave with daily batonnage, then aged 6 months in bottle before release into the market.

Notes: The aromas and flavors of white fruits predominate, especially peaches, white melons, and apples. In the mouth, a vibrant acidity balanced with good peach and pear fruit, with slight tannins (coming from the red grapes) that help give this wine is surprisingly good structure. Excellent as an aperitif, with light or medium rich plates in general. Also good with white meat, raw meats (like tartare or carpaccio) and fatty cuts such as salt pork. Excellent with seafood in general and shellfish grilled or raw. Also pairs well with fresh cheeses.
