Site: Sandy, stony loam, about 50 meters above sea level. 

Grape: Trebbiano, Fiano and Vermentino

Fermentation and Aging: Short cold soak followed by a soft pressing and long, cool fermentation. After fermentation the wine takes a long break resting on the fine lies. Aged in vat and bottle. 

Notes: Elephas takes its name from the "original" inhabitants of the winery - a nod to the fossil remains of Mammoths found while excavating the new cellar (the tusk was stolen by the Nazis during WWII, but an enormous femur remains on display at the winery). Beautiful color with aromatics of pears, peach, and white flowers, this wine is easy to drink and refreshing. 

Pairing: A great wine for aperitif, for all kinds of light dishes, whether fish or fowl or vegetable. Also good with fresh cheeses. Try it with an omelette, toasted baguette, and salad in the evening - perfetto!
