Site: Marl and calcareous soil
Grapes: 100% Chardonnay
Fermentation and Aging: The chardonnay grape cultivated on these steep hills produces a sparkling wine via a process of secondary fermentation in tanks (Charmat Method). The grape harvest (mid September), yields a basic wine through temperature controlled fermentation. Sugar and yeast is then added for the refermentation phase, which lasts 15 days at a temperature between 17° and 18°C. The product, now a sparkling wine, is then left in the tank to mellow on the fermentation lees.
Notes: An intense, deep and harmonious taste. Served at a temperature of 10°-12°C it is excellent as an aperitif, with fish or preferably fresh cheeses.
