In a few words: Licorice and fruity red berry aromas. Mouth is incredibly long and silky. Pairs beautifully with red meats and games.
Site: Moulin à Vent is famous for the magnesium in its soils. This comes from a 2 Ha site in La Lure with Magnesium and Black Granite. Average vine age is over 50 years.
Grapes: Gamay noir
Fermentation and Aging: Manual harvest and grape box picking enable complete respect as well as a strict sorting of the grapes. Following the Burgundian tradition, the grapes are de-stemmed before being put into vats. This is followed by a very slow fermentation which is induced by indiginous yeast which starts at a low temperature. The fermentation period is very long in order to optimize the extraction of the colours and the tannins. Aged 33% in foudre, 66% in barrique, 20% new, for a few months.
Notes: About 10,000 bottles produced - this wine is absolutely fantastic. Should improve in the cellar over about 10 years. First vintage was 2003.
