Site: Languedoc. The main supplier is located near Nimes, at Saint Genies de Magloire, north of Montpellier, a site with very good clay and limestone soil.
Grapes: 100% Cabernet Sauvignon
Fermentation and Aging: It is very important that the grapes are harvested at full maturity, as under-ripe Cabernet is hardly charming. Therefore much attention is given to phenolic ripeness in order not to harvest too soon. Grapes are de-stemmed, and then a long, cool fermentation to extract soft tannins and flavor compounds.
Notes: Classic Cabernet notes of currant, with some spicy blackberry, and a balanced palate with tannins and acids in order; a fine finish.
Pairing: Try it with duck or a roast beef sandwich. Pleasant with pheasant or other game. Try it with a strip steak on the barbie. You cannot go wrong with roast lamb.
