Site: Extraordinary amphitheater shaped vineyards in the Village of Prissé. Jurassic chalk and clay; quaternary. South and South-West exposure, maximum sunshine. Vineyard age averages 40 years. Vine training is guyot with “arcure”, or bending the canes into an arc. Natural fertilizer. 

Grapes: 100% Chardonnay

Fermentation and Aging: Hand picked grapes are processed by gravity, cold-settled, and pressed very gently off the skins. Fermented in temperature controlled tanks, using local selected yeasts that respect the terroir. Full malolactic fermentation.
